This easy and simple recipe is delicious and a must have for Peanut Brittle fans.
1 cup white sugar 1/2 cup of salted peanuts
1/2 cup corn syrup 1/2 teaspoon vanilla extract
1/2 cup water 1 teaspoon baking soda
In a medium saucepan, combine sugar, corn syrup and water. Cook over low heat and stir constantly until it reaches soft ball stage 235 degrees if you have a candy thermometer (or have a soft ball feel when a few drops in cold water).
Fold in nuts and continue to cook until it reaches soft crack stage 280 degrees.
Remove from heat and blend in extract and baking soda.
Pour onto greased cookie sheet, quickly spreading mixture to a thin layer and distributing nuts evenly.
Let cook and then crack into pieces.
