Good-bye canned cranberry sauce (not that I liked you to begin with). I found this Gordon Ramsay Apple Cranberry Sauce recipe a few years ago and it has become a new Christmas tradition addition for my festive feast.
2/3 cup of castor sugar or icing sugar 2 cups fresh cranberries
2 apples 1 oz of Port
2 star anise 1/8 cup of water
zest and juice of one large orange 4 cardamon pods or 2/3 teaspoon of ground cardamon
Core, peel and thinly slice apples.
In a large heavy bottom saucepan over medium to low heat, combine sugar, star anise, cardamon and cranberries. Add water as sugar is melting.
Cook until cranberries blister and pop. Add apples.
Deglaze with port and add orange zest and juice.
Cook for 5 to 10 minutes until thickened.
Cool and refrigerate.
This recipe can be prepared 3-4 days in advance and can be served cold or at room temperature.
I prefer to make it at least a day in advance so all the flavors have a chance to marry.
