This Cherry Almond Macaroon recipe is a must have for macaroon lovers.
4 eggs (separated) 1 1/2 cups all-purpose flour
1/4 teaspoon salt 1 1/2 teaspoons almond extract
1 1/2 cups white sugar 3 cups sweetened shredded coconut
1 1/2 cups red or green candied cherries
Grease cookie sheets (you will probably need 2).
Separate eggs (you will need both the whites and the yolks for this recipe).
In a small bowl combine egg whites and salt. Beat until foamy. Gradually add sugar, beating until very stiff (should take 4-5 minutes).
In a large bowl, beat egg yolks and stir in coconut. Add flour, cherries and extract. Mix well.
Stir in egg white mixture until very stiff.
Drop by tablespoon onto greased cookie sheet. Bake at 350 for about 12 minutes (or until set and edges are very light golden brown).
Remove from oven and let cool.
